Apricot Whip

Makes 7 half-cup servings

 

Try this for a light and refreshing dessert! Apricot Whip can be served over fruit, used as a topping in fruit parfaits, or poured into a pie shell and garnished with fresh fruit for a delicious tart. Apricot Whip may be made the day before serving. Keep chilled till serving.

 

 

20 dried apricot halves (about 1 cup)

1 cup apple juice concentrate or pineapple juice

6 dates (chopped) for sweetening

2 cups firm silken tofu

1/4 cup honey

1 tsp vanilla

1/8 tsp salt

2 Tbsp oil (grapeseed preferred)

 

 

Steps

  1. Make the whip: In a saucepan, combine apricot halves, apple juice concentrate, and dates.
  2. Simmer over medium heat until apricots are softened. Transfer mixture to blender container and blend until smooth and creamy.
  3. Add tofu, honey, salt and oil to the apricot puree mixture and continue blending until smooth. Pour into individual serving dishes. Chill until set.

 

Just before serving, garnish with fresh fruit.
