Pear Cake

4 cups peeled, cored, and chopped pears
1 1/4 cups brown sugar

Egg replacer for 2 eggs
1/2 cup olive oil
1 cup chopped pecans
1/2 tsp ground cloves (optional)
1 cup whole wheat flour
1 cup white flour
1 tsp salt
1 1/2 tsp baking soda
1 tsp ground nutmeg (optional)
1 tsp ground cinnamon

Combine pears and sugar in bowl. Let stand for one hour. Preheat oven to 325°F. Spray a 10" bundt pan with non-stick cooking spray.

In another bowl, mix egg replacer, oil, chopped pecans, and pear mixture. Stir in salt, nutmeg, cinnamon, cloves, baking soda, and flour. Mix well.

Transfer batter into the prepared pan. Bake for seventy minutes at 325°F or until toothpick inserted in center comes out clean. Remove from oven and let cool on wire rack for ten minutes before removing from pan.
